It was found that the nitrous acid content in overnight vegetables basically did not change if the storage time was not more than 24 hours below 4°C .

For overnight vegetables at 25°C, the nitrous acid content in meat products does not change much, but the nitrous acid content in leafy vegetables rises significantly after 12 hours, and even reaches more than 100 mg per kilogram after 24 hours. Risk of excessive content.

As for the total number of colonies, the overnight vegetables stored in a refrigerator at 4°C have little microbial growth, and those stored at 25°C have a large number of microorganisms after 6 hours.

It can be seen that the safety of overnight vegetables is inseparable from storage conditions and storage time . Overnight vegetables stored in cold storage have very little nitrite content and microbial proliferation. Therefore, overnight vegetables should be stored at low temperature, and leafy vegetables are best cooked and eaten now.
