Researchers have found that allicin and other substances in garlic can inhibit Helicobacter pylori, Gram-positive bacteria, and negative bacteria, and reduce the risk of gastric cancer caused by Helicobacter pylori, but it does not prevent gastric cancer.

There are too many claims about garlic, not only that it can prevent cancer, but also that garlic pot can cause cancer. Is this claim true?

The reason why it is said that there are carcinogens in the garlic pot is because garlic will produce acrylamide when heated at high temperature, and acrylamide is a class 2A carcinogen, and this substance has neurotoxicity and carcinogenicity according to research, but there are two reasons. Pots that can break the garlic back.

1. Exaggerated the carcinogenic risk of 2A carcinogens

In fact, Class 2A carcinogens are only clearly carcinogenic to animals, and are only possible carcinogenic substances to humans. It does not necessarily cause cancer when ingested by such substances, and acrylamide exists in many foods around us.

2. The dose size is not considered

In terms of carcinogenicity and toxicity, the dose should also be considered. Although the garlic pot will produce acrylamide, the dose is too small compared to other foods such as potato chips and barbecue.

Compared with the carcinogenic risk of the garlic pot, the following foods are the real carcinogens and must be avoided.

1. Moldy food

Some molds and toxins will be produced in moldy food. Among them, aflatoxin is the most carcinogenic toxin. Generally, it is more common in moldy corn, dried fruits and other foods, which may induce liver cancer.

2. Chinese-style salted fish

The International Agency for Research on Cancer has classified Chinese-style salted fish as a class of carcinogens. It is not only high in salt, but also may produce nitroso compounds. Regular consumption may increase the incidence of cancers such as nasopharyngeal cancer.

3. Alcoholic beverages

4. Betel nut
