NO.1 Pork with plum vegetables

Steps:
- Put 500 grams of plum vegetables in water to soak it, and cut the pork belly with skin from the middle. Heat the wok and put the pork belly with the skin directly on the bottom of the wok to cook the pork hair. Burn it until it is charred, then wash it with a steel ball in clean water.
- Cut the processed pork belly into small pieces of even size and put it directly into a cold water pot. Put ginger slices and green onions in it, and add a few drops of cooking wine to remove the fishy smell. Bring to a boil without the lid on. After the water boils, skim off the foam and continue to cook for five minutes.
After five minutes, remove the pork belly. Rinse in warm water and continue to put in a pot of cold water. Add onion, ginger, star anise, bay leaves, and dried chili segments.
