Prepare ingredients: a small handful of remaining dumpling skins, a potato, a tomato, 1 coriander, a little chopped green onion, cooking oil, refined salt, enoki mushrooms, and 2 eggs.
Steps:
First, we will cut the prepared dumpling skins into diamond-shaped pieces, then shake them up and put them in a bowl for later use. The dumpling skin must be cut into small pieces, so that it is easier to cook when cooking.
For a fresh potato, we peel it and put it in clean water to wash off the surface moisture. Then slice it into thin slices and into long strips, and finally dice it and put it in a bowl for later use. For the cut potatoes, we add an appropriate amount of water to cover the potatoes to remove the starch on the surface of the potatoes.
Tomato one we cut a cross knife on the top, then put it in boiling water and blanch for three minutes. After three minutes, the skin of the tomatoes can be easily peeled off. Then cut it into small pieces and put it in a bowl for later use.
We cut a sprig of coriander into small pieces, wash the enoki mushrooms, then break them up and put them in a bowl for later use. Crack two hen eggs into a bowl, then use chopsticks to mix it well and set aside.
Wash the wok and heat it up. After it is heated, add a spoonful of cooking oil to it. When the oil is hot, fry the prepared chopped green onion in it until fragrant. Finally, add the diced tomatoes and fry them to make the tomato juice.
Then add an appropriate amount of water in it, add the diced potatoes, put it in, cover with a lid and bring to a boil. After the water boils, add the right amount of refined salt and pepper to taste, and stir it well with a spoon.
Put the sliced enoki mushrooms in it, and put the shaken dumpling skins at the same time. Cover and cook again on medium heat for five minutes.
After five minutes, the dumpling skins and diced potatoes are cooked, and then pour in a little egg liquid, and after they are cooked, they can be placed on a plate.
