Production Method:

  1. Wash the eggplant and cut it into hob pieces.

  2. Marinate the eggplants with salt for 5 minutes, squeeze out the soup, add dry starch and stir evenly, so that the eggplants can be evenly covered with dry starch.

  3. Cut the bell pepper into pieces. Peel the potatoes and cut them into hob cubes the size of the eggplant.

  4. Take a bowl, add soy sauce, salt, sweet and sour starch, chicken essence and a small amount of water to blend into the sauce.

  5. Fry the potatoes into the oil pan until the surface is crusted and can be pierced with chopsticks. Drain the oil.

  6. Fry the eggplants into the oil pan until golden brown, remove and drain the oil.

  7. Leave the bottom oil in the pot and sauté chopped garlic until fragrant, pour in the sauce and boil until thick.

  8. Pour in the oiled eggplant and potato bell pepper.

  9. Quickly stir fry evenly, so that each ingredient is evenly coated with the soup.
